Recipe: Strawberry Almond Milk


I'm always in search of new, healthy recipes and am completely in love with this recent find. I made it twice this past week! 

You will need:
1 cup raw almonds (soaked overnight)
12-15 fresh strawberries
2 pitted dates
3 1/4 cups filtered water
pinch of sea salt

Drain and rinse the almonds. Combine all the ingredients in a blender and blend on high until smooth. Strain the milk using a cheese cloth or metal strainer. This step takes a little bit of time, but I found that a combination of those two worked best for me. I placed a few layers of cheese cloth in the strainer and used a spatula to push the liquid through. 
Transfer the strawberry almond milk to a container and refrigerate.

Recipe: Chia Pudding


I first tried and instantly fell in love with chia pudding at La Pain Quotidien when we were living in California. I have since tried to replicate it at home, but it never tasted quite right and so I gave up.  This week I was craving a pudding/panna cotta dessert, but while looking through recipes and seeing the large amounts of heavy cream and whole milk I just couldn't bring myself to make it and so decided to give chia pudding one more try. This recipe was exactly what I was looking for, it's so  delicious and a much healthier alternative to regular puddings! It's also the easiest dessert you will ever make!

Thai Coconut Soup


First ever attempt at one of my favorite soups, Thai coconut. This one has tofu, mushrooms, and rice noodles. Some of the ingredients can be hard to find in regular grocery stores, but Whole Foods should have everything you need. I used low fat coconut milk and will probably use the regular next time to get more of the coconut flavor. Recipe below:)

Recipe: Spinach + Lentil Salad


After indulging in way too many desserts last week, I was craving something fresh and healthy for dinner. I love adding lentils to salads, it makes the salad filling enough to be an entire dinner.  This salad was put together from things we had on hand and would be just as delicious with any other veggies. 

Spinach + Lentils + Radish + Tomato + Avocado + Cilantro + Goat Cheese + Leeks

vegan blackberry oatmeal crumble bars


this was not the most attractive of desserts, the bars were extra crumbly and messy, but absolutely delicious and so healthy! i can't wait to make them again!

Recipe: Overflowing vegetable tart


this tart is a compilation of different recipes with an addition of things that we had at home. how this whole thing started i am not even sure, but we had potatoes, leeks, and zucchini at home and i have been having an ongoing love-affair with goat cheese so i decided to combine everything into one dish. at our house we also eat tomatoes with just about everything and the little colorful heirloom ones were perfect here. 
the finished tart was more delicious than i ever imagined! there is still left over dough in the freezer anxiously waiting to be made into another one of these. :)

Recipe: Lemon Souffle


I've always had a weakness for lemony desserts. Lemons bars, tarts, poppy seed muffins, love them all! But that delicious tart, lemon flavor is even more perfect when paired with the soft, airy texture of a souffle. I also  love that there are no complicated ingredients and they bake in just 15 minutes! Recipe here
