Recipe: Overflowing vegetable tart


this tart is a compilation of different recipes with an addition of things that we had at home. how this whole thing started i am not even sure, but we had potatoes, leeks, and zucchini at home and i have been having an ongoing love-affair with goat cheese so i decided to combine everything into one dish. at our house we also eat tomatoes with just about everything and the little colorful heirloom ones were perfect here. 
the finished tart was more delicious than i ever imagined! there is still left over dough in the freezer anxiously waiting to be made into another one of these. :)









tart dough:
2 cups flour 
3/4 teaspoon salt
1 1/4 sticks unsalted butter (cold)
cold water

filling:
large potato
2 zucchini
2 leeks
heirloom tomatoes
goat cheese
2 eggs
3/4 cups half and half
fresh thyme

to make the tart:
combine flour, salt, and butter in a food processor and mix until just combined. add cold water a table spoon at a time until dough comes together. wrap and place in the fridge for an hour. 
pre-bake tart for about 20 min at 350 with weights or rice.

while tart is baking, thinly chop and light fry leeks. remove tart at layer the leeks and thinly sliced potatoes and zucchini.  crumble goat cheese over top and tomatoes. season with salt, pepper, and fresh thyme. 

combine the eggs, half and half, salt and pepper. pour over the tart. tomatoes and goat cheese should remain exposed. 

bake for 45 minutes.
