This cake is divine! It combines two of my favorite things, chocolate and hazelnuts, and tastes like a giant macaron! Best of all it is not complicated to make or time consuming. We have been enjoying it all weekend!
preheat oven to 350F
line a 9-10 inch springform cake pan with parchment. butter paper and sides of pan.
combine butter, chocolate and sugar in a heatproof bowl over simmering water. heat until butter melts and chocolate is soft. remove from heat and continue stirring until chocolate is melted. cool to room temperature.
beat egg yolks only into chocolate mixture, one at a time. stir in the nuts.
beat the egg whites with a pinch of salt in a bowl until stiff peaks form. fold into the chocolate, one third at a time. scrape into prepared cake pan and bake 40-60 min (mine was done in about 35). cake will be ready when it pulls away from the pan slightly and is firm in the middle, with a fudgy top.
*you can use a mixture of hazelnuts and almonds. i also used a mixture of dark and milk chocolate because i am not a fan of very bitter chocolate.
