Recipe: Artichoke and Feta Tarts with Tomato Salad


A quick and delicious recipe from Donna Hay* that I have wanted to try for quite some time.  It's perfect as an appetizer or lunch and is ready in less than 20 minutes! 




*One change I would make to the recipe is to use basil instead of the mint, the mint just didn't work for me with this.
