Recipe: Peach and Creme Fraiche Tart


desserts with peaches are one of my weaknesses. i loved this tart because the peaches are kept fresh, if fact there is no baking involved at all! and it doesn't even feel like eating a dessert, but more like a fresh, healthy breakfast! the crust tastes like a lara bar and the cream with the peaches is to die for! everyone should make this! :)





recipe adapted from sprouted kitchen

crust:
1 cup of toasted pecans
8 large dates
1 cup of almond meal
2  tsp coconut oil
pinch of salt

combine all ingredients in a food processor and press into the bottom of a springform pan. 

cream:
1/2 cup creme fraiche
1/4 cup sugar (powdered sugar gives a creamier consistency)
1/4 cup muscavado sugar
1 tbsp corn starch (can be left out)

combine ingredients and spread over crust.

top with thinly sliced peaches and sprinkle with pecans. refrigerate from an hour to let cream set. 
enjoy!

  4. This looks really great. I'm wondering how much muscavado sugar should I use? It only says 1/4 but not whether it is cups tablespoons or teaspoons. Thank you.
