Recipe: Veggie Summer Rolls with a Peanut Sauce

i have recently fallen in love with these types of veggie rolls (summer/spring/basil). after enjoying some again this past weekend at a new thai place in pasadena, i decided to give them a try at home.
 getting the veggies prepped was easy enough, but soaking and wrapping the rice paper took a few tries. in the end they were kinda fun to put together! 
 it's a really great way to have a fresh, quick lunch or light dinner. healthy and delicious!

for the rolls:
thinly slice red cabbage, carrots, cucumbers and avocado
soak the rice paper in warm water for a few seconds
shake of excess water and lay the sheet on a cutting board
put a small red lettuce leaf on one edge of the rice paper
arrange the other veggies on the lettuce leaf and cover with another lettuce leaf
roll the rice paper over the lettuce folding in the two sides

  4. I love doing these but do always find the rice paper wrapping tricky too. I see you wrap your veggies in the lettuce before you wrap the whole thing which I think may just be the key to my success! Thanks for sharing!

  7. The rice paper rolling seems a bit tricky but I'm sure it's worth the try! They look yummy and super healthy! :-)
